How to cook:

Composition:

  • Eggplant - 1 kg;
  • Zucchini - 1 kg;
  • Bulgarian pepper - 1 kg;

  • Tomatoes - 3 kg;
  • Garlic - 0.1 kg;
  • Salt - 50 g;
  • Granulated sugar - 1.5 tbsp.;
  • Greens: dill, parsley - to taste;
  • Sunflower oil - 1.5 tbsp.;
  • Peppercorns - 5-6 pcs.;
  • Allspice - 5-6 pcs.;
  • Bay leaf - 2 pcs.;

How to cook:

  1. Eggplants are washed, cut into circles or halves, if the fruits are large.
  2. Zucchini are washed, freed from seeds and skins and cut into half rings if the fruits are old. Young fruits are cut into circles, leaving the skin.
  3. Pepper is washed, seeds removed and cut large enough.
  4. Carrots are washed, peeled and grated.
  5. Garlic is peeled and chopped.
  6. The greens are finely chopped.
  7. Tomatoes are mashed with a meat grinder or blender.
  8. Sunflower oil, spices, herbs, salt, sugar, garlic are added to the tomato mass.
  9. Prepared vegetables are placed in cooking utensils, poured over with tomato paste.
  10. Set to cook for 40-60 minutes.
  11. At the end of cooking, add vinegar and put it in sterile jars.
  12. Cover with a blanket for gradual cooling.

Composition:

  • Sweet pepper - 1 kg;
  • Tomato juice - 1 l;
  • Salt - 2 tbsp. l .;

  1. Of tomato juice, salt, granulated sugar and vinegar prepare the marinade. All components are mixed and brought to a boil.

  • Bulgarian pepper - 2 kg;

  • Capsicum - 1-3 pcs.;
  • Garlic - 6 cloves;
  • Salt - 1.5 tbsp l .;
  • Granulated sugar - 1 tbsp.;
  • Sunflower oil - 1 tbsp.;
  • Acetic acid 9% - 1/2 tbsp

Cooking method:

  1. Chop tomatoes in mashed potatoes in any way.
  2. Put on the stove and boil for about 20 minutes.
  3. Salt, sugar, garlic, finely chopped, seedless hot pepper and chopped into small pieces are added, as well as vegetable oil.
  4. The mass is brought to a boil and cooked for 10-15 minutes.
  5. In the meantime, they are preparing vegetables, which should be washed in advance.
  6. Grate carrots.
  7. Peppers are freed from seeds and cut into strips or cubes.
  8. The onions are peeled and also cut. Try to keep the pieces about the same size.
  9. The vegetables are combined with a tomato mass simmering on the fire and boiled for 30-40 minutes.
  10. Vinegar is poured in 5-10 minutes before the end of cooking. Bring to a boil and lay out the winter blank on sterile jars.

Advice! Along with the vegetables, you can add any aromatic herbs that will add new flavor nuances to the dish. This can be parsley, basil, marjoram and others.

  • Eggplant - 2 kg;

  • Granulated sugar - 100 g;
  • Ground black pepper - to taste;

How to cook:

  1. Vegetables are sorted out, washed, dried.
  2. Tomatoes are chopped in mashed potatoes in any way.
  3. Eggplants are cut into rings or halves.
  4. Grate carrots.
  5. Seeds are removed from the peppers, cut randomly.
  6. Peel the onion, cut it in half rings.
  7. Chop the garlic.
  8. Combine all components: eggplants, peppers, grated tomatoes, onions, garlic, sunflower oil, sugar, salt.
  9. Set to cook for 40-50 minutes.
  10. At the end of cooking, as usual, add ground pepper and vinegar. They are laid out in sterile jars and sealed.

What you need:

  • sweet pepper - 1 kg;
  • canned tomatoes in slices in their own juice - 1 can;
  • Extra virgin olive oil - 2 tablespoons;
  • Bulb onions - 1 pc. medium size;
  • Salt to taste;
  • Ground pepper - to taste;
  • Sugar - 1 tsp

What to do:

  1. Seeds are removed from the pepper, cut into squares.
  2. Simmer the chopped onion in a thick-walled bowl until transparent. Do not fry.
  3. Chopped peppers and tomatoes are added to the onion along with liquid.
  4. All mix well and simmer over low heat for about half an hour. If the lecho seemed thin, then the cooking time is increased, the lid is removed.
  5. At the end of cooking, add salt, sugar, pepper. If the taste of the workpiece seems sour, then even out the taste by adding granulated sugar for another 1-2 tsp.
  6. Bring everything to a boil again and put it in jars. Store the workpiece in the refrigerator.

Composition:

  • Zucchini - 2 kg;
  • Bulgarian pepper - 1 kg;
  • Tomatoes - 1.5 kg;
  • Onions - 1.5 kg;
  • Ready-made tomato paste - 300 g;
  • Sunflower oil - 1 tbsp.;
  • Salt - 1 tbsp l .;
  • Granulated sugar - 1 tbsp.;
  • Acetic acid 9% - 1/2 tbsp

Procedure:

  1. Zucchini are washed, peeled and seeds removed, cut into cubes.Young zucchini need not be peeled.
  2. Pepper is washed, seeds and stalks are removed, cut into squares or strips.
  3. Peel the onion, cut it in half rings.
  4. Tomatoes are washed and cut into slices. You can pre-clean them from the skin by pouring boiling water over them.
  5. A liquid component is prepared: 1 liter of water, oil are poured into a bowl with a thick bottom, tomato paste, salt, sugar are added.
  6. Bring to a boil, add zucchini and cook for 10 minutes.
  7. Then start the tomatoes and peppers. Cook for another 10 minutes.
  8. At the end of cooking, acidify with vinegar. And the hot mass is laid out in sterile containers.

Advice! Try lecho at the end of cooking. Adjust for spices. Vegetables should be boiled, but not out of shape.
