  5. Boiling. The next step in preparing the little waves for quick salting at home will be to boil them. This will remove the bitterness from the mushrooms. Cook for 10 minutes, changing salted water twice. Drain the liquid.

How to quickly salt the waves in the traditional way

The most popular is the traditional fast way of salting the waves.

For cooking you will need:

  • 2 kg of mushrooms;
  • 2 tbsp. l. salt (no slide);
  • ¼ h. L. cumin;
  • 2 tbsp. l. Sahara;
  • 1 tsp coriander;
  • 5 peas of allspice;
  • 3 inflorescences of dry cloves;
  • 3 pcs. laurel;
  • 500 ml of water.

Preparation:

  1. Soak and peel the mushrooms.
  2. Boil them for 30 minutes over low heat. For flavor, you can add a head of onion. After the time has elapsed, drain the liquid.
  3. Add all other ingredients to boiling water, while stirring constantly.
  4. Put the waves tightly in jars (previously sterilized).
  5. Pour in the spices and cover the jars with lids.

After two days of salting, the snack can be served.

Advice! If you plan to pickle mushrooms for the winter, then you need to add 3 tbsp. tablespoons of vinegar so that the blanks are preserved longer.

How to quickly and deliciously pickle waves with garlic and currant leaves

There is another quick way to add salt to the waves. The secret ingredient will be currant leaves. With their help, the appetizer will turn out to be crispy and will have a piquant aroma.

For cooking you will need:

  • 1.5 kg of waves;
  • 4 things. inflorescences of dry cloves;
  • 5 cloves of garlic;
  • 1 liter of water (purified);
  • 4 things. allspice;
  • 3 tbsp. l. salt;
  • 7 pcs. laurel and currant leaves.

Preparation:

  1. Before pickling the mushrooms, they need to be placed in water for 2 days, while changing it up to 9 times.
  2. Drain the water, leave them in a colander to glass the liquid.
  3. Heat purified water in a saucepan.
  4. Add mushrooms and cook for 15 minutes.
  5. Pour the liquid into a separate bowl.
  6. Layer all ingredients. Lay out currant and laurel leaves on top.
  7. Pour in a thin stream the liquid in which the main product was cooked.

  • 6 tbsp. l. salt (no slide);
  • 2 pcs. horseradish leaves;
  • 5 pieces. laurel;
  • 3 cloves of garlic;
  • 50 g dill (fresh twigs);
  • 2 liters of water (purified).

Preparation:

  1. Add salt to boiling water.
  2. Omit pre-prepared mushrooms. Cook for about 10-15 minutes with bay leaves and allspice, stirring occasionally.
  3. Drain the water, cool the contents of the pan.
  4. At the bottom of the container, lay a layer of waves, cover it with chopped horseradish, garlic, bay leaves, generously sprinkle with salt and dill.
  5. Add the next portion of the mushrooms.
  6. The last layer should consist of leaves, since oppression must be put on top.

After 3 weeks, the salad can be served with vegetable oil.

Fast salting of waves in a cold way

There is a quick recipe for salting waves, many call this method "salting for lazy housewives." It will take a minimum of time to prepare it, since there is no boiling stage for the main product in the process.

For cooking you will need:

  • 3 kg of waves;
  • 50 g salt;
  • 2 cups vegetable oil;
  • 4 things. horseradish leaf and laurel.

Preparation:

  1. Prepare mushrooms (soak and peel).
  2. Drain the water.
  3. Spread them out on paper towels to drain the water.
  4. Put the waves in a saucepan or portioned jars, periodically adding some salt and adding chopped horseradish. The fruit must completely fill the container.
  5. Boil vegetable oil in a saucepan.
  6. Pour it warm into a container so that the mushrooms are completely covered. Put the salted blanks in a cool place, and after 5 weeks you can feast on the prepared dish.

How to quickly pickle mushrooms with cabbage leaves

For a quick way to salt the waves, you will need a large container (saucepan or tub).

For cooking you will need:

  • 4 tbsp. l. lemon essence;
  • 2 tbsp. l. cumin;
  • 50 g dried dill;
  • 4 glasses of salt;
  • 5 pieces. cabbage leaves.

Preparation:

  1. Soak the peeled mushrooms in brine for 5 hours. To prepare it, you will need 1 cup of salt and 1 tbsp. l. lemon essence. During this time, the brine should be changed 4 times.
  2. On a separate plate, mix together the cumin, dill and salt.
  3. Drain the water, and leave the fruits on a paper towel for a few minutes to absorb excess water.
  4. Put the fruits on the bottom of the pan with the caps down. Their layer should be up to 7 centimeters, then cover it with spices. Put the cabbage in the last layer.
  5. Install the oppression on top so that it covers the entire surface.
  6. Place the container with the workpiece in a cool place.

The pickling process will take about three weeks. Before use, the waves should be soaked so that they become less salty. Serve as a salad with vegetable oil and finely chopped onions.

For cooking you will need:

  • 6 kg of waves;
  • 12 pcs. dry clove buds;
  • 300 g of salt;
  • 20 slices of green apples;
  • 10 cloves of garlic;
  • 10 pieces. laurel and cherry leaves.

Preparation:

  1. You can salt the product in a deep container (saucepan or tub).
  2. At the bottom of the pan, spread half of the leaves and apples, salt.
  3. Place the mushrooms on the prepared "flooring" with the caps down.
  4. Sprinkle with salt and grated garlic on top.
  5. Place the other half of the apples on top of the mushrooms.
  6. Send the last layer out of the leaves.

Storage rules

Salted waves are stored in a cool place, the temperature should not exceed +10 degrees. For such purposes, a refrigerator, pantry or cellar is suitable.

If salting was done in a cold way in a large container, it is better to use such a product within 3 months. Otherwise, the fermentation process will begin.

If the product is cooked hot and rolled up in jars, then it can be stored for up to 12 months in a dark and cool place. Overexposing the workpieces is not worth it, since after the expiration of the shelf life, the workpieces begin to deteriorate.
