It is not always possible to fully use jam prepared for the winter. If the new season is already approaching, then it is better to wait for the next harvest of apples. The remaining blanks can be used to make homemade apple wine jam.
Preparatory stage
To get a tasty wine, you need to prepare for the subsequent processing. This will require a 3-liter jar, a nylon lid and gauze.
It is allowed to make a drink in a wooden or enamel bowl. Regardless of the stage of preparation, the drink should not come into contact with metal surfaces (with the exception of stainless steel).
In the process of fermentation of the jam, carbon dioxide is formed, so it must be eliminated. Therefore, a water seal is placed on the container. They sell it in a specialized department or do it yourself.

The amount of water directly depends on how much sugar the jam contains. Its optimum content is 20%. If the jam is not sweet, then an additional amount of sugar is added.
The recipe for making wine from apple jam includes several stages:
- The glass jar needs to be washed with a baking soda solution to disinfect it. Then the container is rinsed several times with water. As a result, harmful bacteria, whose activity leads to wine acidification, will die.
- Apple jam is transferred to a jar, unwashed raisins, water and sugar are added. The components are mixed to obtain a homogeneous mass.
- The jar is covered with gauze, folded in layers. This forms a protection against insects entering the wine.
The container is left in a dark room with a constant temperature of 18 to 25 ° C. The mass is kept for 5 days. Every day it is stirred with a wooden stick. The first signs of fermentation appear within 8-20 hours. If foam, hissing sounds and a sour aroma appear, then this indicates the normal course of the process. - A mash forms on the surface of the wort, which must be removed. - A water seal is placed on the container, after which it is transferred to a warm, dark room.
Fermentation lasts from one to two months. As a result, the liquid becomes lighter, and sediment accumulates at the bottom of the container. When the formation of bubbles in the water seal stops or the glove is deflated, then proceed to the next stage. - Young wine must be drained from the lees. This requires a thin hose. If necessary, you can add sugar or alcohol to the drink to increase the strength. Fortified wine is less aromatic and more astringent in taste, however it has a longer shelf life.
- Glass bottles are filled with wine, which must be filled completely. Then they are sealed and transferred to a cold place. The holding time is at least 2 months. It is best to increase this period to six months. The wine storage room maintains a constant temperature of 6 to 16 ° C.
- The wine develops a sediment every 20 days. To eliminate it, the drink is poured into another container. With prolonged presence of sediment, the wine develops bitterness.
Jam wine has a strength of about 10-13%. The drink can be stored in a cool place for three years.
Fermented Jam Wine
If the storage conditions are violated, the jam may ferment. This jam is also suitable for making wine.
Wine is obtained in the presence of the following components:
- apple jam in the fermentation stage - 1.5 l;
- water - 1.5 l;
- unwashed raisins (1 tbsp. l.);
- sugar - 0.25 kg.
The process of making wine consists of a number of stages:
- First, combine an equal amount of jam and warm water, add raisins.
The wort should taste sweet, but not sweet. Add up to 0.1 kg of sugar if necessary. - The resulting mass is poured into a glass container, a water seal is installed. The diluted jam should fill the container by 2/3.
- A water seal is put on the bottle, after which it is transferred for fermentation in a dark place with a temperature of 18 to 29 ° C.
- After 4 days, 50 g of sugar is added. To do this, carefully drain 0.1 l of wort, dissolve sugar in it and pour it back into a container. After 4 days, the procedure must be repeated.
- After two to three months, fermentation will end. The wine is carefully poured into a new container, being careful not to touch the sediment.
- Young wine is filled in bottles, which are left for six months in a cool place. Check for sediment every 10 days. If it is found, re-filtration is required.
- The finished drink is bottled and stored for 3 years.
Quick recipe
A faster way to get wine is by using wine yeast. Homemade apple jam recipe looks like this:
- Place 1 liter of apple jam and a similar amount of water in a glass container. Then add 20 g of wine yeast and 1 tbsp. l. rice.
- A water seal is put on the bottle and placed in a dark, warm place for fermentation.
- The fermentation process is evidenced by the appearance of bubbles in the water seal. If a glove is used, it will be raised when carbon dioxide is emitted.
- When fermentation is complete, the wine takes on a light shade. If the drink turns out to be sour, add up to 20 g of sugar per liter.
- The resulting drink is carefully drained, leaving a precipitate.
- The drink will be fully prepared after 3 days. Add mint or cinnamon to it to taste.
Wine with honey and spices
Delicious wine is obtained by adding honey and various spices. The drink is prepared in compliance with a certain technology:
- A three-liter jar is sterilized, after which it is filled with apple jam and spring water in equal proportions.
- Then you need to add 0.5 kg of sugar to the container, and then close it with a lid.
- The mixture is left for a month in a cool, dark place.
- After the specified time, the container is opened and the mash layer is removed.
- The wine is filtered using gauze and poured into a separate clean container.
- At this stage add 0.3 kg of unwashed raisins, 50 g of honey, 5 g of cloves and cinnamon.
- The bottle is corked and left for another month.
- When sediment appears, the wine is re-filtered.
- After the indicated time, the apple drink is ready to use.
Cane Sugar Wine
Instead of regular sugar, you can use cane sugar to make wine from jam. The process of preparing a drink differs little from the classical method:
- An equal amount of jam and water are combined in one container. 0.1 kg of cane sugar is added to 1 liter of the resulting mixture.
- The container is closed with a water seal and left to ferment in a dark place for two months.
- Then the pulp is removed and the liquid is filtered.
- Apple wine is left for 40 days in a new container in a dark room.
- The finished drink is filled into bottles, which are placed in the cold for permanent storage.
