- garlic - 1 medium head;
- vegetable oil - 250 ml;
- salt. - 2 tbsp. l .;

- vinegar essence - 1.5 tablespoons.

After the vegetables are dry, peel the peels from them, and also the middle from the zucchini, if the seeds have already formed. Remove the husk from the onion. We wash the vegetables again and put them on a clean napkin.

For caviar, you need peeled tomatoes. Scald them with boiling water, then dip them in ice water. Clean up without problems. After that, the tomatoes are ground into a separate cup.
- First cut the vegetables into pieces, and then grind them in a meat grinder. Zucchini must be ground separately to drain off excess liquid. Garlic is chopped in a garlic press.

For boiling caviar, you need to choose a dish with a thick bottom. It is undesirable to use an enamel pan, because the snack burns in it.
- We put chopped vegetables (except tomatoes and garlic) in a saucepan, salt, sugar, pour in oil and mix thoroughly to get a homogeneous mass. We put on medium heat and bring to a boil with constant stirring.
- As soon as the caviar starts to boil, put it on low heat and cook for about an hour. Close the pot with a lid.
- Add the chopped mixture of ground peppers and tomatoes, cook for another 40 minutes without a lid. If you add tomatoes right away, then the cooking time of the beets will increase.
- After 10 minutes, add the garlic, boil for 5 minutes and pour the essence. After 3 minutes, the caviar is ready.
A hot zucchini with beetroot appetizer, cooked without frying vegetables, is laid out in sterile jars, closed with screw or tin lids. Turning the cans upside down, wraps them in a blanket.
