Strawberries are perhaps one of the earliest berries that appear in our summer cottages. After eating the first fragrant berries, many rush to close at least a few jars of strawberry jam for the winter. There are quite a few recipes for such a delicacy. In this article, we will show you how to make such a jam using gelatin.
Benefits of gelatin jam
Strawberry Jam with Gelatin is not the classic recipe we are used to making. In terms of its consistency, such jam is more like jam. But it is this feature that gives it a number of advantages:
- Jam with gelatin is not so liquid, therefore it can be successfully used as a filling for various baked goods. In addition, it can be spread on bread or pancakes and not be afraid that it will bake from their surface;
- Jars with such a delicacy can be stored for a long time and do not tend to explode;
- Strawberry jam made with gelatin looks very unusual and beautiful.
Traditional recipe for strawberry jam with gelatin
In order to prepare a strawberry delicacy according to this recipe, you need to prepare:
- a kilogram of fresh strawberries;
- a kilogram of granulated sugar;
- half a lemon;
- a teaspoon of gelatin.
Before you start preparing it, you must carefully select all the strawberries. There should be no signs of rot on them. When all the berries are sorted out, you need to remove the leaves and stalks from them. After removing all the leaves, especially large strawberries must be cut into two halves.
In this case, you must either reduce the amount of sugar, or add more berries.
We put all the selected berries in a clean deep dish. An enamel saucepan is best for this. Sugar is sprinkled on top of the berries. In this form, the strawberries are left for 24 hours. During this time, under the influence of sugar, the strawberry should give up all the juice.
When the specified time has elapsed, you can start cooking. The whole process can be divided into three stages:
- At the first stage, strawberries are boiled for 5 minutes over medium heat... Moreover, they must be constantly stirred with a wooden spatula. She also needs to remove the foam that will form during the cooking process. Cooked berries should be left for 6 hours at room temperature. After that, they must be chopped in a blender or rubbed through a sieve. Then cook again for 10 minutes and cool for 6 hours.
- At the second stage, our almost finished strawberry delicacy, must be boiled again for 10 minutes... But before that, you should add lemon juice squeezed from half a lemon and gelatin previously dissolved in water. The finished jam must be mixed well and left to cool.
- While the finished jam is cooling, you need to prepare a container for it... For this, clean jars are taken and sterilized in any convenient way. If the cans are sterilized over steam, then they must be thoroughly dried by placing them with their neck down. When the strawberry jam has cooled down enough, pour it into prepared jars and close the lids tightly.
Such a frozen treat is very difficult to place in jars. Therefore, as soon as it cools down, it must be closed immediately.
Strawberry treats closed in jars should be stored in a cool place.
Strawberry jam with lemon
Strawberry jam, made according to this recipe, perfectly combines the sweet taste of strawberry with a light lemon sourness. It is perfect not only for spreading on fresh bread, but also as a filling for pancakes.
To cook it you will need:
- 400 grams of fresh strawberries;
- 100 grams of granulated sugar;
- 2 lemons;
- 40 grams of gelatin.
As in the previous recipe, you must carefully sort out all the berries, removing the spoiled ones. Then they must be well rinsed and dried. Only then can you begin to remove the leaves and stalks.
The further process of making strawberry treats according to this recipe can be divided into the following stages:
- First, all the berries must be combined with sugar and beat with a blender. If it is not there, then you can grind all the berries through a sieve, add sugar to them and beat thoroughly with a whisk. As a result, you should get a mass that is homogeneous in consistency, resembling mashed potatoes;
- Rinse the lemons well and grate the zest of half one lemon on a fine grater. After that, all the juice must be squeezed out of the lemons. The resulting lemon zest and juice must be added to the berry puree;
- Last but not least, add gelatin. After adding it, the future jam must be whipped again with a blender or a whisk;
- At this stage, the berry puree mixed with all the ingredients is poured into a saucepan. It must be brought to a boil and cooked over medium heat for 2 to 5 minutes. In this case, it is very important not to forget to constantly stir the jam, otherwise the berry puree may burn;
- The finished and cooled strawberry delicacy must be poured into sterilized jars and tightly closed with a lid.
These recipes will allow not only to use the remnants of the harvest, but also to preserve a piece of summer heat for the winter.
