For grape compote, absolutely any grape, both blue and white or pink, is suitable. The most delicious drink is obtained from sweet and sour dark varieties. Cocktails with plums, apples or pears are no less good.

At home, you can make delicious compotes, especially if you experiment: combine grapes with other fruits, add spices and spices, dilute the sweetness of wine berries with lemon juice or citric acid.

How to cook grape compote

The calculation of products is given for a three-liter jar:

  • 1 cup granulated sugar;
  • half a can of grapes;
  • 2.5 liters of water;
  • some citric acid.

You need to prepare a vitamin blank like this:

  1. Grapes need to be picked from bunches, cleaned of twigs and rotten berries.
  2. Now the fruits are washed under running water and discarded in a colander so that the glass has excess moisture.
  3. Each jar must be filled with berries to half the volume.
  4. Water is poured into a saucepan and sugar is added. Sugar syrup is boiled on the stove, bringing the liquid to a boil.
  5. Still boiling syrup is poured over the grapes in jars and covered with lids. The drink should be infused for 15 minutes.
  6. After a quarter of an hour, the syrup is poured from the jars into the same saucepan and put on fire. Two minutes after boiling, citric acid is added to the liquid (a pinch of acid is enough for each can).
  7. Now the syrup is poured over the grapes in jars and sealed with a seaming machine.

Jars with compote must be turned over and left to cool completely, covered with a warm blanket. The color of the finished compote will be rich, and the taste, on the contrary, will be light and refreshing.

Grape compote recipe without sterilization

Buying juices and natural compotes is quite expensive, but in winter you really want something tasty, summer and vitamin. You can quickly prepare grape compote for the winter without sterilization - every housewife can do this.

Two three-liter jars will require the following amount of products:

  • 2 kg of blue grapes;
  • 0.5 kg of granulated sugar;
  • 4 liters of water.

How to make compote:

  1. Pick the berries from the bunches, pour water for 15-20 minutes, rinse thoroughly and discard in a colander so that the water is glass.

Important! Non-sterilized grape compote can only be stored in the basement and no more than a year.

Compote made from grapes and apples

The taste of such a drink is twice as good, because it contains not only grapes, but also aromatic apples. The acid from apples brightens the grape compote, its shade turns out to be very beautiful, ruby. But, this, if you take the berries of dark varieties (Moldova, Isabella) - they are best suited for preparing such a compote for the winter.

For each can you will need:

  • 150 g granulated sugar;
  • 1-2 bunches of grapes (depending on size);
  • 3-4 apples.

It is simple to brew a vitamin drink:

  1. The grapes are washed directly on the brushes, shaken off and slightly dried.
  2. Apples should also be washed and cut into several parts, remove the core with seeds. If the fruits are small, you can put the apples in the jar whole.
  3. Banks are pre-washed with soda and sterilized.
  4. Apples and grapes are placed in each jar, filling the container by 2/3.
  5. It remains to add sugar, pour boiling water over the fruit, filling the jars to the very neck, and roll up.

The compote is turned over and wrapped. The next day, you can lower the cans into the basement.

Attention! You can also cook such a compote from white grapes. In this case, you need to take red apples so that the color of the drink turns out to be beautiful.

Recipe for compote for the winter from grapes and plums

The taste and aroma of the wine berry goes well with other fruits. The blue variety can be advantageously combined with a plum, getting a fragrant and tasty drink for the winter.

You will need the following ingredients:

  • blue grapes 4-5 medium bunches;
  • 250 g granulated sugar;
  • 0.5 kg plums;
  • water.

The preparation of the drink will be like this:

  1. Banks are prepared in advance: first, they wash the containers with soda, then sterilize them in the oven or in any other way. After this procedure, the container must dry completely.
  2. The grapes are not picked from the bunches, they are washed just like that. The brushes are well shaken off. Plums are also washed and slightly dried.
  3. Place so many plums in each jar to fill the container by a quarter. Put a couple of bunches of grapes on top. As a result, the jar should be half full of fruit.
  4. The prepared fruit mixture is poured with boiling water and the jars are covered with lids.
  5. After half an hour, you need to drain the water infused with the berries and place it in a saucepan. Sugar is poured there, mixed and brought to a boil. After boiling, you can boil the syrup a little more so that the sugar in it dissolves completely.
  6. Pour the fruit with boiling syrup and quickly close the jars with metal lids.Now you need to turn over the containers with compote and leave in this position for half an hour. When the drink cools down a little, the cans are turned over to their normal position and wrapped with a blanket - so the compote itself will go through the sterilization process.

The workpiece is taken out to the cellar in 2-3 days, when the compote is well infused and completely cooled under the blanket.

How to close lemon compote

This drink turns out to be very refreshing, it can be prepared not only for the winter, but also cooked every day to quench your thirst in the unbearable summer heat. In addition to excellent taste, this preparation for the winter boasts a high content of vitamin C, which is very useful in the period of autumn and spring beriberi.

For cooking you will need:

  • 100 grams of grapes;
  • 30 g lemon;
  • 1 spoon of sugar;
  • 1 liter of water.

It is very simple to prepare a healthy and invigorating drink:

  1. Pick the berries from the bunches and rinse thoroughly. Remove damaged and rotten grapes.
  2. The lemon should be scalded with boiling water and cut into slices along with the peel.
  3. Place berries and lemon slices in a saucepan, cover with sugar and add water. All this must be brought to a boil and cooked over low heat until the sugar is completely dissolved.
  4. To drink fresh compote, simply cover the pan with a lid and wait for the drink to cool completely. For preparation for the winter, compote is poured along with fruits into jars and sealed with metal lids.

Advice! Those who do not really like sweets do not need to add sugar to the grape drink. Then the compote will turn out to be slightly sour and will be stored longer.

How to close grape compote for the winter with whole bunches

Small-fruited blue varieties are most suitable for such a blank, because the bunch should fit freely into the jar and pass through its neck. Cooking this compote is even faster and easier, because you don't have to sort out and pick berries.

The ingredients are as follows:

  • whole bunches without damaged and rotten berries;
  • 2 liters of water;
  • 1 cup granulated sugar.

The cooking technology is very simple:

  1. The brushes are washed under running water, examined and single spoiled grapes are removed.
  2. Banks need to be washed with baking soda, but not sterilized yet.
  3. Several bunches are placed in each jar to fill it by about a third.
  4. Pour boiling water over the grape bunches, filling the jars to the top. After 10-15 minutes, the water is drained.
  5. Sugar is added to this infusion and the syrup is brought to a boil.
  6. Pour the grape bunches with boiling syrup and seal with a seamer.

For the first day, the compote is in inverted jars, securely wrapped in a blanket. The next day, you can put the workpiece in the cellar or in the pantry.

Advice! So that the compote does not taste bitter, the grape bunches are cut to the very base, in the place where the brushes with berries begin.

If you are making grape compote, remember that large amounts of sugar can ruin the delicate taste of this drink. In addition, most varieties are already characterized by increased sugar content, therefore, in some cases, you may not add granulated sugar at all.
