Unfortunately, when buying apples in a store, we do not know either the name or the timing of the ripening of the fruit. That is why the choice is based on the following parameters:
- Apples should be sweet and sour, with a pronounced aroma.
- In addition, the fruit should be firm, not starchy, ripe, but not softened.
- Apples with damage, wormholes, hints of rot or defects should be discarded immediately.
- You can use apples of any color, the taste of soaked apples does not deteriorate from this, as long as there is sourness in them.
- Before peeing with cabbage, apples are kept for 2 weeks in a dark, cool place.

- A wooden circle, a plate or a nylon lid (in jars) is placed on top of the cabbage. They should be slightly less than the diameter of the utensil for dipping apples. Before starting work, they are washed in salt water (a tablespoon of salt per 1 liter of water) and poured over with boiling water.
- You also need to prepare cheesecloth or cotton cloth to cover the dishes.

Step two - peeing process
The first layer is cabbage with carrots, then apples. Fill the voids tightly with vegetable composition. So we put the jar up to the top in layers. The last layer is cabbage and carrots. We cover with a cabbage leaf, insert a nylon cover, bend on it, a towel on top so as not to get dust.
After a while, juice will stand out. It should close the lid. From time to time, you need to pierce the contents of the jar with something sharp and thin, for example, a knitting needle, so that the released gas evaporates.

- cabbage - 4 kg;
- apples - 3 kg;

- salt - 90 grams;
- sugar - 60 grams.
